Chocolate Crackle Slice

Chocolate crackles are hands down one of best things about childhood birthday parties and school fates. This slice will take you right back there but i’m going to say these taste even better, and they are modified to be a little healthier than the block of copha and cups of sugar that made those childhood memories so sweet. These babies ring in at only 100 calories per square and less than 1 tsp of sugar.

Chocolate Crackle Slice (makes 25 squares)

3 cups rice puffs (I used Freedom Foods)

1/2 cup desiccated coconut

30g scoop chocolate protein powder (optional)

1 heaped tbsp cacao or cocoa powder

1/3 cup Melrose organic coconut oil

1/3 cup rice malt syrup (could also use honey but RMS has a more neutral flavour)

80g Melrose chocolate hazelnut nut butter

100g 70% dark chocolate

1 extra tbsp coconut oil

1 tsp vanilla extract

pinch of salt

Method:

  1. Line a square baking tray with greaseproof paper.

  2. In a large mixing bowl combine rice puffs, protein powder, coconut and cacao powder. Stir.

  3. Heat in a small saucepan coconut oil, rice malt syrup, 30g of the dark chocolate, nut butter, salt and vanilla extract. Stir over medium heat until all ingredients are melted and combined.

  4. Pour melted chocolate mixture over rice puffs and stir until rice puffs are coated in wet mixture.

  5. Pour into lined tin and press firmly with the back of a spatular to compact into the tin.

  6. Place in the freezer.

  7. Heat remaining 70g dark chocolate with extra 1 tbsp coconut oil until melted.

  8. Pour over crackle slice and return slice to refrigerator until set.

  9. Cut into squares and keep in an airtight container in the fridge.
